Chicken and Bacon Gnocchi.

This is the easies meal to cook and it's a crowd pleaser.
SHOPPLING LIST
500g Gnocchi
5 Streaky Bacon strips
500g Chicken Tender Loins finely sliced
Salt and Pepper
2 1/2 tsp Italian Herbs
1 1/2 tsp Paprika
1/2 tsp Chilli Flakes
150g Baby Spinach
250g punnet Baby Roma Tomatoes cut in half
5 Cloves Garlic (crushed)
1 1/2 cup cream
2 cup Parmesan Cheese
Cook off the Gnocchi as per the instructions. I got mine fresh from the markets and it was easy, 2-3 minutes in boiling salty water. Drain and set aside.
Place the bacon in a large frypan that will be big enough to cook all these ingredients at one time. Cook off until crisp. Remove and chop up into roughly 1 1/2cm piece. Set aside. Save the bacon fat as we will cook with it later. Do not wash or rinse your frypan because all the flavours that make this dish will come from that frypan.
Now the Chicken. Slice into thin flat pieces, Using a little of the bacon fat, fry off the chicken until there is no pink with the Paprika, Italian Herbs and Chilli Flakes and a little salt and pepper. Once again set that aside.
Almost finished now. Put a little more of the bacon fat into the frypan and add the garlic, cook for about 1 minute and then add the spinach and tomatoes and cook for another minute. Then add the cream, once again cook it off for a couple of minutes and them add the parmesan cheese, chicken and gnocchi. Stir it all together and once the parmesan cheese has melted its done, you can simmer until the sauce reduces and thickens.
If you like you food hot, spicy hot, add more chilli to taste and if you like other vegetables like mushrooms or asparagus you can add them in to make this dish your own.
Serve with a little Parmesan Cheese on the top and maybe a few fresh baby spinach.
